This fan favourite from my book Hot Detox, is super high in protein. It is also very soothing and easy to make. Follow the directions closely! Yes, this is a real photo of how they look when they are made according to the directions.
2 tbsp coconut butter (use coconut oil if butter is unavailable)
2/3 cup raw honey
2 large eggs
2 cups hemp hearts
2 cups coconut, shredded
1 tbsp ground flax
2 tsp ginger powder
2 tsp cinnamon
1/4 tsp pink rock or grey sea salt
1. Preheat oven to 350 F.
2. With a hand mixer, beat egg, honey and coconut butter until smooth and fluffy, about 1 minute.
3. Combine hemp, coconut, flax, ginger, cinnamon and salt in large mixing bowl.
4. Fold in egg mixture to flour mixture and combine well.
5. Line cookie sheets with parchment paper. Scoop 1 tbsp of mixture and roll into a ball. Place on the sheet and flatten top using fingers.
6. Bake for 15 minutes.
Makes 24 cookies.
Flax Egg Substitution:
To substitute the egg in the recipe I sent just mix 2 1/2 tbsp of water with 1 tbsp of ground flax seeds. Let it soak for 5 mins and then use as 1 egg.
This recipe calls for 2 eggs so make up 5 tbsp of water and 2 tbsp of ground flax. This is above and beyond the flax that is called for in the recipe already.
