Decadent Vegan Chocolate Ganache Tarts

Need a healthy decadent chocolate treat to win over your friends? This special occasion vegan recipe is a delightful addition a birthday party or festive celebration!

For the crust:
1 + 1/4 cup    almonds or pecans
1 + 1/4 cup    shredded coconut
2 tbsp            coconut oil, melted
1 tbsp            cocao powder 
2 tbsp            honey or coconut syrup
Pinch             unrefined sea salt
1 tbsp            coconut milk 
For the ganache filling:
200 g            good quality stevia or coconut sweetened dark eating chocolate, chopped (70 – 85 % cocoa solids)
3/4 cup         full fat coconut cream (from the top of the coconut milk)
Pinch            unrefined sea salt
2 tsp             mint extract or vanilla extract  
To serve:      raw cacao, nuts or fresh berries
Chocolate Ganache Tart Crust by
To make the crust: 
1. Prepare 5-6 ramekins or spring tart pans.  
2. Blend all the crust ingredients in a food processor until a chewy dough consistency. 
3. Add  tablespoon of coconut milk. 
4. Press the mixture into your prepared ramekins or pans and set into the fridge to set.
Chocolate Ganache Tart Crust by
To make the ganache: 
1. Chop the chocolate into really small pieces. 
2. When you open the can of coconut cream, drain the fluid into a bowl and place aside. 
3. Warm the coconut cream in the saucepan over a medium heat until hot but be careful not to boil. 
4. Remove the pot from the heat. 
5. Add the chocolate and a pinch of salt and flavours if using. 
6. Allow it to stand for a few minutes without stirring. 
7. Stir gently until smooth (should take a minute or so). 
8. If it is too thick to pour, gently warm it on the stove on the lowest heat possible and add a few teaspoons of the reserved coconut water back in. 
Organic Unsweetened Baker's Chocolate ~
To make the tarts: 
1. Pour the ganache into the ramekins or tart shells and put in the fridge to set (around 2 hours minimum).
Filling Chocolate Ganache Tarts by
To served:
1. Topped with fresh berries, pecans, cocoa nibs or mint leaves. 
2. Store covered in the fridge for up to 5 days. Makes 5-6 tarts.
