Chia Pomegranate Pudding

A hormone balancing recipe from my ebook Healing the Hormonal Heart.* This high-energy recipe is great for breakfast or as a quick snack. It is also very portable. 

Ingredients:
1 cup         boiling water
2 cups       wild blueberries (frozen is fine)
1 cup         pomegranate or wild berry juice
1 cup         applesauce
1/2 cup     chia seeds
2 Tbsp       hemp hearts
2 Tbsp       pumpkin seeds

Optional:
1/2 tsp       ground ginger
1/2 tsp       ground cinnamon
1 tsp          pure vanilla extract
2 tsp          sunflower lecithin powder
5 drops     organic stevia extract (if you like it sweeter)
1 cup         pomegranate seeds (about 1 pomegranate)


Directions:
1. Pour one cup boiling water over the blueberries in a bowl, mixing gently to thaw them.
2. Add juice, applesauce, chia, and hemp hearts and stir until well combined.
3. Mix in optional ingredients if desired and place overnight in the refrigerator to set.
4. In the morning, divide the pudding mixture among four bowls and top with fresh fruit and seeds. If pomegranate is unavailable, other fresh fruit would do.
