These gems are fat free and full of flavour. I made them in honour of my friend Tara who has been a source of inspiration and support. Spelt is easier to digest than regular wheat and the spices help to balance your blood sugar. PGX™ (PolyGlycopleX) is a completely unique blend of soluble fibers.. Compared to other soluble fibers, significantly less PGX™ is required to obtain the same important health benefits including glucose balance, appetite control and reduced food cravings.

 

Ingredients:


1 1/3 cups spelt flour
3/4 tsp baking soda
1 tbsp fresh ginger  or 1 tsp powder
1 tsp cinnamon
1/4 cup molasses
1/4 cup brown sugar or coconut sugar (couple teaspoons aside for the top)
2 tsp PGX granules  (amazing fibre supplement that cuts cravings)
3 tbsps orange juice concentrate (frozen orange juice concentrate thawed)

 

Directions:

 

  1. Mix it all together, roll it out and cut into shapes as desired.
  2. Bake at 300 F for 12 minutes.

 

Makes 18 cookies.

I love Ginger cookies and so does the family. Does PGX fit with a Vegan diet? Could I substitute oatbran or something along those lines for the PGX? Thank you for sharing your recipe!

Hi Joan,

Yes PGX does fit in with the vegan diet. It's main ingredient is Konjac Root with some seaweed. It is an amazing product!

The binding properties of PGX would not be replaced by Oat Bran. You could use something like psyllium seed husks or Agar Agar but you would have to experiment as I haven't made the recipes with these ingredients.
